WHO IS TAKING PART?

NUDITEA
Milk Oolong, Oolang Tea, Fujian Province - China, Hand Picked, Climate Frosted, Partially Oxidised and Roasted

The creamy character of Oolang Tea is developed by allowing the tea leaves to be frost damaged prior to harvest, the leaves are then partially oxidised ahead of roasting. Usually, tea estates in cooler parts of the world will do everything they can to prevent this happening, but under very specific conditions the flavour produced with frost damage is encouraged - as is in the case of Milk Oolong. The frost damage is technically bad for the leaves, but produces a far sweeter character as a result. In order to mimic the character of the naturally occurring frost on the estate, we work with a Trusted Smallholder in the Fujian Province in China, whom during the processing of the plucked tea, subjects the leaves to a process of rapid freezing to produce the same flavour profile of those exposed to natural frost. This is the process our Milk Oolong goes through prior to rolling and roasting.

Khipu Coffee
La Chacra D'Dago - Biodynamic Coffee, Catuai, Costa Rica 95, Obata and Tupi, Peru, Washed

Chacra D'Dago is a 3rd generation coffee production company in Peru, with a unique approach to coffee farming using biodynamic methods that go beyond organic practices. The harvest is all selective and done by hand with no machinery used at all. This helps to screen the quality to make sure only the ripest, clean, free of defect cherries make it through to the drying stage. The Marin family use fertilisers from their farm, compost, intercropping systems, and native trees, and even follow an astronomical calendar for fertilisation and compost. They are the only biodynamic farm in Peru and are certified organic and biodynamic by Demeter. The fermentation process at Chacra D'Dago is meticulous, and the coffee cherries go through a 2-step quality control process before being washed, pulped, and stored in concrete tanks for 76 hours, followed by being dried on African beds for 10 - 15 days. It’s the combination of the farm grown fertiliser and the design of their farm that allows them to grow super organic coffee and at the same time protect and nourish the soil year on year for consistent, high quality coffee, every year.

Origin Coffee
Guineyal Lot 5, Pacamara, El Salvador, Dehydrated honey

Carlos Pola is a pioneer of sustainability, always looking forward. Every stage of his work, from crop to cup, considers the environment; his innovative spirit means he relishes a challenge, and seeks out new ways to do things. It’s his determination, optimism, and meticulous attention to detail that continues to inspire and influence such exceptional coffees. Carlos considers, protects, and improves the treatment of the land, creating canopy shade and even engineering better water preservation.

None of Carlos’s coffee processes use a lot of water, as part of a conscious effort. Water is only used as a means of quality control. The coffee cherries are placed in water to sort and select only the ripest; unripe, defected cherries will float. This particular lot of coffee was placed into the water tank for sorting, before the selected cherries are then placed in a polybag and set aside for three days. The cherries are then removed from the bag, and dried on raised beds that Carlos himself has designed and built in a bid to reuse materials, including string and mesh. These raised beds create better airflow, and result in an exceptional flavourful, final cup.

Climpson & Sons
Finca San Jeronimo Miramar, Catuai, Atitlan, Guatemala, Honey Process

Climpson & Sons is a coffee company that sources its beans from an environmentally-friendly coffee farm run by fourth-generation coffee producers, Giorgio and Gina Bressani, at Finca San Jeronimo Miramar. The farm occupies a quarter of the famous volcano, Volcan de Atitlan, ranging from 700-2600 meters above sea level, and has been transformed from using industrial fertilizers to homemade compost. The farm also features hydro-electricity to power the estate and is self-reliant off the grid. The company's coffee is a perfect balance of smooth and sticky sweetness with notes of cacao, maple syrup, and dates. The farm also implements several practices to prevent soil erosion and promote a healthy ecosystem, including using cover crops, nitrogen-fixing plants, and natural ground cover.

Danelaw Coffee
Honduras Rosely Hernandez, Catimor, Honduras, Washed

Rosely is a young woman with a young family who is making waves in the coffee industry with her exceptional beans. Her coffee is usually bulked and sold to the local co-operative, where she rarely sees or hears of it again. Danelaw Coffee has worked with Rosely for over five years, and they noted that her coffee has been a perfect addition to their espresso blends and as a single origin. Danelaw Coffee stated her beans are not only of the highest quality but are also certified Organic and Fairtrade. When they shared with her that they were launching her coffee under her name, she was overwhelmed with emotion, saying "I could cry, this is a dream come true." As the average coffee farmer in Central America is a man in his 60s, supporting and encouraging women like Rosely is vital to ensuring the long-term sustainability of coffee farming in the region.

Union Hand-Roasted Coffee
Women of Maraba, Red Bourbon, Rwanda, Fully washed

Union Roasted Coffee's longest-standing producer partner, Abahuzamugambi Ba Kawa Co-operative (also known as Maraba), is Fairtrade certified and has a special all-women subgroup that grows a unique parcel called Women of Maraba. Over the past 20 years, Union Roasted Coffee has worked closely with Maraba and paid price premiums through their Union Direct Trade sourcing model, leading to major developments in healthcare, schooling, housing, and coffee quality. Maraba's women's fund was created in 2020 to encourage women's financial independence, and in 2021, Union Roasted Coffee purchased its first women's parcel from Maraba, paying twice the Fairtrade minimum price and providing a microcredit fund for individual or group projects.

Tea Rebellion (Rebellion Food Brands Ltd)
Annabel Kalmar, Tea - Camellia Sinensis, Nepal Himalayas, Fuji, Eastern Nepal, Pucked to one leaf & a bud, Withered, Dried

Tea Rebellion's organic white tea is made by Cooperative Kanchanjangha, owned by 100 cooperative members who participate in decision-making as shareholders and earn dividends. The farm has shade and acacia trees and is funding agroforestry projects for the region. The tea is named after Deepak Prakash Baskota, the founder of the organic and cooperative movement in Nepal. White Prakash is a high-quality, low-caffeine tea made from the baby plant only in spring with virtually no processing. It is considered the healthiest of all caffeinated teas, with vanilla, spring blossoms, and melted butter notes.

Lincoln & York
Summer Solstice Swiss Water Decaf, Mixed, Brazil, Natural

Lincoln & York's Summer Solstice RFA Swiss Water Decaf coffee is sustainably sourced from the Daterra farm in Brazil, which is carbon negative and the world's first B Corp certified coffee farm. Daterra's farming practices include carbon sequestration, whereby they absorb carbon from the atmosphere and store it in the soil and vegetation. Each bag of coffee comes with its own 'Sequestration Declaration' certificate, which details the amount of sequestered carbon earned from a purchase. Additionally, 53% of Daterra's land is dedicated to environmental preservation, and the farm has committed to increasing CO² sequestration by 50% by 2030. The coffee undergoes a chemical-free Swiss Water decaf process, and 80% of the water used is returned clean to the community. Finally, the coffee is roasted in Lincoln & York's zero-waste-to-landfill roastery in Brigg, North Lincolnshire. They use 100% renewable energy sources and are working with 'One Carbon World' towards their goal of becoming carbon neutral by 2024.

The Little Coffee Company
